Slice the eggplant into thin strips.

Heat vegetable oil in a pan and fry the eggplant until golden brown. Remove and set aside.

In the same pan, sauté shallots, garlic, and red chili peppers until fragrant.

Add tamarind paste, sugar, and salt. Stir well.

Add the fried eggplant back into the pan and mix until well coated.

Cook for another 5 minutes.
