In a blender, combine ripe bananas, oats, almond milk, maple syrup, vanilla extract, cinnamon, baking powder, and salt. Blend until smooth.

Heat a non-stick pan over medium heat and add coconut oil.

Pour the pancake batter onto the pan, using approximately 1/4 cup for each pancake.

Cook for 2-3 minutes, until bubbles form on the surface of the pancake. Flip and cook for an additional 2-3 minutes.
