Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion becomes translucent.

Add sliced courgettes and cook for another 5 minutes.

Pour vegetable broth into the pot and bring to a boil. Reduce heat and simmer for 15 minutes or until courgettes are tender.

Remove the pot from heat and let it cool slightly.

Using a blender, puree the soup until smooth.

Return the soup to the pot and stir in coconut milk, chopped fresh basil leaves, salt, and black pepper.
