Preheat the oven to 325°F (165°C).

In a large bowl, combine the rolled oats, almonds, cashews, dried cranberries, dried apricots, pumpkin seeds, and sunflower seeds.

In a small saucepan, heat the maple syrup, coconut oil, ground cinnamon, vanilla extract, and sea salt over low heat until the coconut oil is melted.

Pour the liquid mixture over the dry ingredients and mix well to coat everything evenly.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown.

Remove from the oven and let it cool completely before storing in an airtight container.

Serve with yogurt or milk of your choice.
