Preheat the oven to 400°F (200°C). Cut the cauliflower into small florets and toss with 1 teaspoon of olive oil. Spread the cauliflower on a baking sheet and roast for 20 minutes.

In a large pot, heat the remaining olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the roasted cauliflower, smoked paprika, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

Meanwhile, prepare the herbed chickpea dumplings. In a food processor, combine the chickpeas, fresh herbs, flour, baking powder, salt, and black pepper. Process until well combined. Add water as needed to form a thick batter.

Drop spoonfuls of the batter into the simmering soup. Cover and cook for 10 minutes, or until the dumplings are cooked through.
