  1. Heat vegetable oil in a skillet over medium heat. Add onion, bell pepper, celery, and garlic. Cook until vegetables are softened.
  2. Transfer the cooked vegetables to a slow cooker.
  3. Add vegetable broth, diced tomatoes, tomato paste, creole seasoning, smoked paprika, dried thyme, dried oregano, and cayenne pepper to the slow cooker. Stir well.
  4. Add rice, kidney beans, and okra to the slow cooker. Stir again.
  5. Cover the slow cooker and cook on low heat for 4 hours.
  6. After 4 hours, remove the lid and stir the jambalaya. Let it rest for 10 minutes.
  7. Serve the jambalaya hot, garnished with green onions and fresh parsley.
