Heat vegetable oil in a large pot over medium heat. Add minced garlic, ginger, and chopped onion. Cook until onion becomes translucent.

Add chopped carrot and potato to the pot. Sauté for a few minutes.

In a small bowl, mix curry powder, turmeric powder, cumin powder, red chili powder, salt, and black pepper with a little water to form a paste. Add this paste to the pot and sauté for a minute.

Pour coconut milk and water into the pot. Stir well.

Add chopped tomatoes and mixed vegetables. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes until the vegetables are cooked.

Garnish the soup curry with fresh coriander leaves.

Serve hot with a wedge of lemon.
