  1. Preheat the oven to 180°C.
  2. Heat olive oil in a pan and sauté minced garlic and diced red onion until fragrant.
  3. Add spinach and cook until wilted. Season with salt and black pepper.
  4. Remove the pan from heat and crumble feta cheese over the spinach mixture.
  5. Roll out the puff pastry and cut into squares. Place a spoonful of the spinach mixture onto each square, then fold into triangles and seal the edges.
  6. Beat the egg and brush it over the pastry triangles.
  7. Bake in the preheated oven for 15 minutes or until golden brown.
  8. Serve hot and enjoy!
