Heat vegetable oil in a pan and add chopped onion, garlic, and ginger. Cook until onion turns golden brown.

Add curry powder, turmeric powder, cumin powder, coriander powder, chili powder, and salt. Stir well.

Add zucchini and cook for 5 minutes.

Pour coconut milk and simmer for 15 minutes.

Garnish with fresh cilantro.
