Senegalese sweet potato, rice and beans stew

In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.

Add the sweet potatoes, rice, black-eyed beans, vegetable broth, tomato paste, peanut butter, ground cumin, ground coriander, cayenne pepper, salt, and black pepper to the pot. Stir well.

Bring the stew to a boil, then reduce the heat to low and cover the pot. Simmer for about 40 minutes, or until the sweet potatoes and rice are tender.

Remove the pot from the heat and let it rest for 10 minutes.

Serve the stew hot, garnished with fresh cilantro and lime wedges.
