Heat vegetable oil in a pan and add chopped onion, garlic, and ginger. Cook until onions are translucent.

Add curry powder, cumin powder, and turmeric powder. Stir well.

Add chopped tomatoes and cook until they soften.

Add sliced carrots and cook for a few minutes.

Pour in coconut milk and simmer for 15-20 minutes until carrots are tender.
