  2. Add the seitan and mushrooms to the skillet, and cook until the mushrooms are soft and the seitan is lightly browned.
  3. In a small bowl, whisk together the soy sauce, vegetable broth, cashews, paprika, and Dijon mustard. Pour the mixture into the skillet and stir well.
  4. Reduce the heat to low and simmer for 10 minutes, or until the sauce has thickened slightly.
  5. Stir in the coconut cream and season with salt and black pepper. Cook for an additional 5 minutes.
  6. Meanwhile, cook the egg noodles according to the package instructions.
  7. Serve the stroganoff over the cooked egg noodles, garnished with fresh parsley.
