  1. In a large mixing bowl, combine the bread flour, whole wheat flour, rye flour, and water. Mix until a shaggy dough forms.
  2. Add the active sourdough starter and salt to the bowl. Mix well to incorporate all the ingredients.
  3. Cover the bowl with a clean kitchen towel and let the dough rest for 30 minutes.
  4. After the rest, fold in the sunflower seeds, pumpkin seeds, sesame seeds, and poppy seeds.
  5. Cover the bowl again and let the dough rise at room temperature for 2 hours, or until doubled in size.
  6. Preheat the oven to 450°F (230°C).
  7. Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
  8. Score the top of the loaf with a sharp knife.
