Preheat the oven to 425°F (220°C).

Peel and cut the sweet potatoes into 1-inch cubes.

In a large bowl, toss the sweet potatoes with olive oil, honey, lime juice, salt, and cayenne pepper.

Spread the sweet potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring once halfway through cooking.
