In a large bowl, combine the whole wheat flour, all-purpose flour, yeast, honey, olive oil, and salt. Mix well.

Add the flaxseeds, sunflower seeds, pumpkin seeds, sesame seeds, and poppy seeds to the bowl. Mix until well combined.

Gradually add water to the bowl while stirring. Mix until a sticky dough forms.

Transfer the dough to a floured surface and knead for about 10 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 375°F (190°C). Punch down the dough and shape it into a loaf.
