Seaweed Muffins

Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.

In a bowl, soak the seaweed in water for 5 minutes to rehydrate. Drain and roughly chop.

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar.

In a separate bowl, mix together the vegetable oil, soy milk, and apple cider vinegar. Add the wet ingredients to the dry ingredients and stir until just combined.

Fold in the chopped seaweed.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes. Then transfer them to a wire rack to cool completely.
