Savory Lentil Loaf
Lentils are one of the oldest cultivated crops and have been a staple in many cultures for thousands of years.

Preheat the oven to 350°F (175°C).

In a saucepan, cook the lentils according to the package instructions. Drain and set aside.

In a large skillet, sauté the onion, carrot, celery, and garlic until softened.

In a large bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, flaxseed meal, tomato paste, soy sauce, dried thyme, dried oregano, salt, and black pepper. Mix well.

Transfer the mixture into a greased loaf pan and smooth the top.

Bake in the preheated oven for 40-45 minutes, or until the top is golden brown.

Let the lentil loaf rest for 10 minutes before serving.

Serve slices of the lentil loaf with ketchup on the side, if desired.
