  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 5 minutes.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the couscous and soaked saffron, cover, and remove from heat. Let it sit for 10 minutes.
  3. Meanwhile, heat olive oil in a large skillet over medium heat. Add the pine nuts and toast until golden brown, stirring occasionally. Remove from the skillet and set aside.
  4. In the same skillet, add the red bell pepper, green bell pepper, red onion, and minced garlic. Sauté for 5 minutes or until the vegetables are tender.
  5. Fluff the couscous with a fork and transfer it to a large serving bowl. Add the sautéed vegetables, toasted pine nuts, fresh parsley, fresh lemon juice, salt, and black pepper. Mix well.
  6. Let the couscous rest for 5 minutes before serving. Enjoy!
