Julienne the carrots, zucchini, and bell peppers.

In a small bowl, mix together soy sauce, minced garlic, grated ginger, sesame oil, cornstarch, water, salt, and black pepper.

Heat a large skillet or wok over medium-high heat.

Add the julienned vegetables to the skillet and stir-fry for 3-4 minutes until slightly tender.

Pour the sauce mixture over the vegetables and continue to stir-fry for another 2-3 minutes until the sauce thickens.

Remove from heat and let it rest for 5 minutes.
