  1. Boil the potatoes until tender. Peel and mash them.
  2. In a bowl, soak the TVP in hot water for 10 minutes. Drain and squeeze out excess water.
  3. Heat oil in a pan and add chopped onion, garlic, ginger, and green chili. Sauté until onions turn translucent.
  4. Add the mashed potatoes, soaked TVP, and all the spices (turmeric powder, coriander powder, cumin powder, red chili powder, garam masala, and salt). Mix well.
  5. Cook for 5 minutes on medium heat, stirring occasionally.
  6. Remove from heat and let it cool slightly.
  7. Preheat the oven to 200°C (400°F).
  8. Take a portion of the potato mixture and shape it into a patty. Repeat with the remaining mixture.
  9. Place the patties on a baking tray and brush them with oil.
  10. Bake for 15-20 minutes or until golden brown, flipping halfway through.
  11. Serve hot garnished with fresh coriander leaves and a squeeze of lemon juice.
