  2. In a medium saucepan, bring the vegetable broth to a boil.
  3. Stir in the couscous and saffron mixture. Remove from heat, cover, and let it sit for 10 minutes.
  4. Meanwhile, heat olive oil in a large skillet over medium heat.
  5. Add the red and yellow bell peppers, red onion, and garlic. Cook until the vegetables are tender, about 5 minutes.
  6. Add the ground cumin, ground coriander, salt, and black pepper. Cook for an additional 2 minutes.
  7. Fluff the couscous with a fork and transfer it to the skillet with the vegetables. Stir well to combine.
  8. Cook for 2-3 minutes, until heated through.
  9. Serve the saffron couscous hot, garnished with fresh parsley.
