Saffron Couscous
Couscous is a staple food in many North African and Middle Eastern countries, and it is traditionally prepared by steaming the grains in a special pot called a couscoussier.
This is vegan and gluten free recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

In a small bowl, soak the saffron threads in 2 tablespoons of hot water for 5 minutes.

In a medium saucepan, bring the vegetable broth to a boil.

Stir in the couscous and saffron mixture. Remove from heat, cover, and let it sit for 10 minutes.

Meanwhile, heat olive oil in a large skillet over medium heat.

Add the red and yellow bell peppers, red onion, and garlic. Cook until the vegetables are tender, about 5 minutes.

Add the ground cumin, ground coriander, salt, and black pepper. Cook for an additional 2 minutes.

Fluff the couscous with a fork and transfer it to the skillet with the vegetables. Stir well to combine.

Cook for 2-3 minutes, until heated through.

Serve the saffron couscous hot, garnished with fresh parsley.
