Carrots get their vibrant red color from a pigment called lycopene, which is also found in tomatoes.

Preheat the oven to 425°F (220°C).

Peel and trim the carrots, then cut them into sticks.

In a bowl, mix together olive oil, honey, balsamic vinegar, salt, and black pepper.

Toss the carrots in the mixture until well coated.

Spread the carrots on a baking sheet and sprinkle with fresh thyme.

Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized.
