Golden Lentil Soup
Lentils are one of the oldest cultivated crops and have been eaten for thousands of years. They are a great source of plant-based protein and are rich in fiber and nutrients.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Rinse the lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.

Stir in turmeric, cumin, coriander, salt, and black pepper.

Add rinsed lentils and vegetable stock to the pot. Bring to a boil.

Reduce heat, cover, and simmer for about 25 minutes or until lentils are tender.

Remove from heat and let the soup rest for 5 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth.

Stir in lemon juice and adjust seasoning if needed.

Serve hot, garnished with fresh cilantro.
