In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for 5 minutes until the yeast becomes foamy.

Add the flour, salt, olive oil, and chopped rosemary to the bowl. Mix until a dough forms.

Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm place for 1-2 hours until it doubles in size.

Preheat the oven to 400°F (200°C). Punch down the risen dough and divide it into 8 equal portions. Shape each portion into a small loaf.

Place the loaves on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle some fresh rosemary.

Bake for 20-25 minutes until the loaves are golden brown.
