Roasted Tomato Soup
Tomatoes are technically a fruit, but they are commonly used as a vegetable in cooking.

Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet.

Drizzle with olive oil, salt, and pepper.

Roast in the oven for 30 minutes, or until the tomatoes are soft and slightly charred.

In a large pot, heat olive oil over medium heat.

Add the chopped onion and garlic, and sauté until translucent.

Add the roasted tomatoes and vegetable broth.

Bring to a boil, then reduce heat and simmer for 15 minutes.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Season with salt, pepper, and basil leaves.
