Preheat the oven to 200°C (400°F).

Peel and cut the sweet potatoes into bite-sized cubes.

In a mixing bowl, toss the sweet potatoes with olive oil, salt, and black pepper.

Spread the sweet potatoes evenly on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.

In the last 5 minutes of roasting, sprinkle the raisins and sunflower seeds over the sweet potatoes.
