  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds.
  2. Place the squash halves on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast in the oven for about 25 minutes or until the flesh is tender.
  4. Remove the squash from the oven and let it cool for a few minutes. Scoop out the flesh and transfer it to a blender or food processor.
  5. Add garlic, salt, and pepper to the blender and blend until smooth.
  6. Serve the butternut squash puree warm as a side dish.
