Finely chop the red bell pepper, red onion, and fresh cilantro.

In a large bowl, combine the roasted sweet potatoes, black beans, red bell pepper, red onion, and fresh cilantro.

Drizzle with the remaining tablespoon of olive oil and toss to combine.
