Preheat the oven to 400°F (200°C).

Cut the pumpkin into chunks and remove the seeds. Drizzle with olive oil and roast in the oven for 30 minutes, or until tender.

In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until onion is translucent.

Add roasted pumpkin, cinnamon, nutmeg, maple syrup, vegetable broth, coconut milk, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Serve hot, garnished with pumpkin seeds.
