Roasted Red Beet Hummus

Preheat the oven to 400°F (200°C).

Wrap the red beets in aluminum foil and roast them for about 40 minutes, or until they are tender.

Once the beets are cool enough to handle, peel off the skin and roughly chop them.

In a food processor, combine the roasted beets, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and black pepper.

Blend until smooth and creamy. If needed, add a little water to achieve the desired consistency.

Transfer the hummus to a serving dish, garnish with parsley, and drizzle with olive oil.
