Roasted Garlic Vinaigrette
Garlic has been used for culinary and medicinal purposes for thousands of years. It is believed to have originated in central Asia and has been cultivated for over 5,000 years.

Preheat the oven to 400°F (200°C).

Cut off the top of the garlic bulbs to expose the cloves.

Drizzle olive oil over the exposed garlic cloves.

Wrap the garlic bulbs in aluminum foil and roast in the preheated oven for 20 minutes.

Remove from the oven and let cool.

Squeeze the roasted garlic cloves out of their skins into a bowl.

Add white wine vinegar, Dijon mustard, honey, salt, and black pepper to the bowl.

Whisk until well combined.

Serve the roasted garlic vinaigrette over your favorite salad.
