Preheat the oven to 425°F (220°C).

Wash and dry the red potatoes.

Place the potatoes on a baking sheet and roast for 30 minutes or until tender.

In the meantime, peel and mince the garlic cloves.

Heat olive oil in a skillet over medium heat. Add the minced garlic and cook until fragrant.

Remove the roasted potatoes from the oven and let them cool slightly.

Using a fork or a potato masher, gently smash each potato until flattened.

Drizzle the smashed potatoes with the garlic-infused olive oil.

Season with salt and black pepper.

Return the potatoes to the oven and roast for an additional 5 minutes.

Garnish with fresh parsley before serving.
