  1. Preheat the oven to 400°F (200°C).
  2. Rinse the lentils and cook them according to package instructions.
  3. In a baking dish, combine the garlic cloves and olive oil. Roast in the preheated oven for 15 minutes or until the garlic cloves are golden brown.
  4. In a blender or food processor, combine the roasted garlic cloves, cooked lentils, lemon juice, tahini, cumin, paprika, salt, and water. Blend until smooth.
  5. Transfer the mixture to a serving bowl and garnish with a drizzle of olive oil, paprika, and fresh herbs if desired.
