  1. Preheat the oven to 400°F (200°C). Cut the cauliflower into florets and toss with 1 tablespoon of olive oil, salt, and black pepper. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
  2. In a large pot, heat the remaining olive oil over medium heat. Add the onion and garlic and sauté until softened.
  3. Add the roasted cauliflower to the pot and stir well. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Return the soup to the pot and stir in the coconut milk, paprika, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot, garnished with fresh parsley.
