Roasted Brussel Sprout Medley
Brussel sprouts are a member of the Brassica family, which also includes cabbage, broccoli, and kale.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 425°F (220°C).

Trim the ends of the brussel sprouts and cut them in half.

Peel and cube the butternut squash.

Slice the red onion.

In a large bowl, combine the brussel sprouts, butternut squash, red onion, garlic cloves, olive oil, balsamic vinegar, maple syrup, dried thyme, salt, and black pepper. Toss well to coat.

Spread the mixture onto a baking sheet in a single layer.

Roast in the preheated oven for 25 minutes, or until the brussel sprouts are tender and caramelized.

Remove from the oven and let it rest for 5 minutes.
