Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and thyme. Cook until onion is translucent.

Add callaloo leaves, coconut milk, and vegetable broth. Stir well and bring to a boil.

Reduce heat to low and simmer for 20 minutes.

Add Scotch bonnet pepper, salt, black pepper, and lime juice. Stir and simmer for another 5 minutes.

Remove from heat and let the soup rest for 5 minutes.
