Preheat the oven to 325°F (160°C).

In a large bowl, mix together oats, almonds, pumpkin seeds, sunflower seeds, chia seeds, cinnamon, dried cranberries, and dried apricots.

In a small saucepan, melt coconut oil over low heat. Remove from heat and stir in maple syrup and vanilla extract.

Pour the liquid mixture over the dry ingredients and mix well to combine.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 20 minutes, stirring halfway through, until golden brown.

Remove from the oven and let cool completely.
