Rinse the wild rice under cold water.

In a saucepan, bring the vegetable broth to a boil and add the wild rice. Reduce heat, cover, and simmer for 30 minutes.

Meanwhile, chop the rhubarb stalks, red onion, and garlic cloves.

In a large skillet, heat olive oil over medium heat. Add the chopped rhubarb, red onion, and garlic cloves. Sauté for 5 minutes until softened.

Add the cooked wild rice to the skillet and stir to combine. Cook for an additional 5 minutes.

Stir in almonds, dried cranberries, fresh parsley, salt, and black pepper.

Remove from heat and let it rest for 5 minutes.
