Red Lentil and Cauliflower Soup
Red lentils are a great source of plant-based protein and are rich in fiber, making them a nutritious addition to any vegetarian or vegan diet.

Rinse the red lentils and set aside.

Chop the cauliflower, carrots, onion, and garlic cloves.

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the cauliflower and carrots, and cook for a few minutes.

Add the red lentils, vegetable broth, ground cumin, ground coriander, and turmeric powder.

Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the lentils and vegetables are tender.

Use an immersion blender or a regular blender to blend the soup until smooth.

Stir in the coconut milk, lemon juice, salt, and black pepper.

Cook for another 5 minutes.

Serve the soup hot, garnished with fresh cilantro.
