  3. While the quinoa is cooking, peel and segment the oranges. Set aside.
  4. In a small bowl, whisk together the olive oil, lemon juice, honey, and salt to make the dressing.
  5. In a large bowl, combine the cooked quinoa, orange segments, walnuts, and dried fruit mix. Pour the dressing over the salad and toss to combine.
  6. Let the salad rest for 5 minutes to allow the flavors to meld.
  7. Garnish with fresh mint leaves before serving.
