  1. Rinse the quinoa under cold water.
  2. In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add rinsed quinoa to the saucepan and stir for a minute.
  4. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked.
  5. In a separate pan, heat olive oil over medium heat. Add drained chickpeas and sauté until slightly crispy.
  6. Add spinach to the pan, sauté until wilted.
  7. Once the quinoa is cooked, fluff it with a fork and add it to the pan with chickpeas and spinach.
  8. Stir in lemon juice, salt, and black pepper.
  9. Cook for an additional 2-3 minutes to allow the flavors to combine.
  10. Remove from heat and let it rest for 5 minutes.
  11. Serve hot and enjoy!
