  1. Rinse the white beans and soak them overnight.
  2. Drain the soaked beans and cook them in a pot of boiling water until tender.
  3. In a separate pan, heat olive oil and sauté the chopped onion, garlic, carrot, and green bell pepper until softened.
  4. Add the tomato sauce, salt, and pepper to the pan and simmer for 5 minutes.
  5. Drain the cooked beans and add them to the pan with the sauce. Stir well to combine.
  6. Preheat the oven to 180°C (350°F).
  7. Transfer the bean mixture to a baking dish and shape it into round balls to resemble eyeballs.
  8. Place a black olive in the center of each ball to create the pupil.
  9. Bake in the preheated oven for 20 minutes.
  10. Serve the spooky eyeball beans over a bed of cooked rice.
  11. Garnish each plate with additional black olives to enhance the spooky effect.
