Quinoa Salad with Apricots and Pistachios
Quinoa is often referred to as a ‘superfood’ due to its high nutritional value and health benefits. It is a complete protein source and contains all nine essential amino acids.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the quinoa under cold water.

In a saucepan, bring water to a boil and add the rinsed quinoa. Cook for about 15 minutes or until the quinoa is tender.

Drain any excess water from the quinoa and let it cool.

In a large bowl, combine the cooked quinoa, chopped apricots, chopped pistachios, diced red onion, and chopped fresh parsley.

In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa mixture and toss to combine.

Let the salad rest for about 10 minutes to allow the flavors to meld.

Serve the quinoa salad chilled or at room temperature.
