  2. Heat vegetable oil in a pan. Add mustard seeds, urad dal, and chana dal. Sauté until the dal turns golden brown.
  3. Add curry leaves, green chili, and grated ginger. Sauté for a minute.
  4. Add turmeric powder and mix well.
  5. Squeeze the juice of one lemon into the pan and mix.
  6. Add cooked rice and salt. Mix well to combine all the ingredients.
  7. Cook for 2-3 minutes, stirring occasionally.
  8. Remove from heat and let it rest for 5 minutes.
  9. Garnish with chopped cilantro before serving.
