Broccoli is a great source of vitamins K and C, as well as fiber.

Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic, and sauté until onion becomes translucent.

Add broccoli florets and vegetable broth, then bring to a boil.

Reduce heat and simmer for about 20 minutes, or until broccoli is tender.

Use an immersion blender to puree the soup until smooth.

Stir in coconut milk and season with salt and black pepper.

Cook for an additional 5 minutes.
