Heat vegetable oil in a large skillet or wok over medium heat.

Add onion and garlic, and cook until onion becomes translucent.

Add carrot and peas, and cook for 2 minutes.

Push the vegetables to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked.

Add cooked rice to the skillet and stir-fry for 3-4 minutes.

Stir in soy sauce, sesame oil, salt, and black pepper.

Cook for an additional 2 minutes, stirring constantly.

Remove from heat and garnish with sliced green onions.

Let it rest for 5 minutes before serving.
