Ingredients
Instructions
-
In a mixing bowl, combine the pumpkin puree, almond flour, maple syrup, coconut oil, cinnamon, nutmeg, and vanilla extract. Mix well until a dough-like consistency is formed.
-
Place the mixture in the refrigerator for 30 minutes to firm up.
-
Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
-
Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
-
Dip each pumpkin truffle into the melted chocolate, coating it completely. Use a fork to remove the truffle from the chocolate, allowing any excess to drip off.
-
Place the coated truffles back on the parchment paper and sprinkle chopped pecans or desiccated coconut on top.
-
Place the truffles in the refrigerator for at least 1 hour to allow the chocolate to set.
-
Once set, serve and enjoy!
