  1. In a mixing bowl, combine the pumpkin puree, almond flour, maple syrup, coconut oil, cinnamon, nutmeg, and vanilla extract. Mix well until a dough-like consistency is formed.
  2. Place the mixture in the refrigerator for 30 minutes to firm up.
  3. Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
  4. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  5. Dip each pumpkin truffle into the melted chocolate, coating it completely. Use a fork to remove the truffle from the chocolate, allowing any excess to drip off.
  6. Place the coated truffles back on the parchment paper and sprinkle chopped pecans or desiccated coconut on top.
  7. Place the truffles in the refrigerator for at least 1 hour to allow the chocolate to set.
  8. Once set, serve and enjoy!
