  1. Peel and boil the potatoes until soft. Mash them.
  2. In a large bowl, combine the mashed potatoes, flour, yeast, olive oil, rosemary, and salt. Mix well.
  3. Gradually add water to the mixture, kneading until a soft dough forms.
  4. Cover the dough with a damp cloth and let it rest for 2 hours.
  5. Preheat the oven to 220°C.
  6. Transfer the dough onto a baking tray lined with parchment paper. Flatten the dough evenly with your hands.
  7. Make small dimples on the surface of the dough using your fingertips.
  8. Drizzle olive oil and sprinkle salt and rosemary on top.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown.
  10. Allow the focaccia to cool slightly, then cut into slices and serve.
