Slice the bell peppers, zucchini, red onion, and eggplant into thick slices.

In a small bowl, combine the jerk seasoning, olive oil, lime juice, salt, and black pepper.

Brush the vegetable slices with the jerk marinade.

Grill or roast the vegetables for about 5 minutes on each side, or until they are tender and slightly charred.

Slice the ciabatta bread into four equal pieces and toast them lightly.

Spread mayonnaise on each piece of bread.
